my only experience on a Spyder was the second range day of the MSF course...I'm pretty sure they stressed leaning the body into the turn....
Grabbing for stuff that is "not there" was a problem for me too.
Luckily both of my scooters have a front brake on the right handle bar and a foot pedal for the rear..(just like a motorcycle)...but I rode a Vespa the other day , and it has two hand brakes on the bars...like a bicycle! I was stomping my right foot but nothing there!
My one scooter has variatior transmission so no shifting....so the left had does nothing but hold the grip.
But my other scooter is 4 speed transmission...but a sort of semi-automatic clutch....so you have to shift with the left foot...but no clutch lever...but I grab for it anyway..but after long rides on this scooter I sometimes shift my motorcycle and forget to pull the clutch...duh...
On top of that, the 4 speed scooter is ....all down is neutral....one up is first, two up is second etc...no neutral between first and second....on top of that it is heal and toe shift....heal for up shift, and toe for down shift...
So you have to mentally adjust, for the vehicle you are riding!

Hi Gizzo and I can help segue that one... 1st few weeks with a Spyder- to lean or not to lean is the question 🤣🤣🤣 and my brain still makes me grab for that non-existent front brake lever🤔
