Seems like a daft question, I have recently bought a bullet electra x with Amal carb upgrade, I’m not sure when the choke is on or off

The choke is on when the choke plunger in the throttle slide is in the down position, off when it is raised.

The cable pulls the choke off. The choke slide is spring loaded to on, so if the cable breaks the choke goes on.

Seems illogical but that’s the way it is.

You might find that you don't even need the choke as the tickler makes sure it starts and the AMAL  pilot circuit is quite rich anyway, never use mine, it is still fitted but I have tightened the lever right down so any vibration doesn't put the choke without me noticing. I will be removing it at some point.

I agree, I removed the choke from my concentric (Wassell copy) after a very short while after buying the cable and a handlebar control because I’ve never needed to use it.
