I hear what you are saying, but if I was you, I wouldn't wait. If I was 72, or any age, I would be going for "Miss Right NOW". There's no guarantee of enough years to ever find "Miss Right". I wouldn't want that RE Classic 350 Signals Marsh Gray to end up being a "dreamsicle", that I only ever get to ride in my dreams.
There's lots of machines that I could start playing with now, and resell later, when Miss Right came along.
These Honda Shadow 750s are rock solid cruisers, that will go 150,000 miles, but kind of heavy in my opinion, around ~540 lbs. For an around town ride, I'd rather be 200lbs lighter. This will, however, carry you all day on the highway. It's a lot of Honda for $1500:

These are very popular for turning into bobbers, so one that is stock is a good thing to find. It weighs no more than your dreamsicle, but has 50hp. $1800 OBO.
https://www.facebook.com/marketplace/item/2082400115431954/Yamaha made another, very popular 650, the VStar. I own one, that I got as a project bike, and I'm very happy with its mechanical simplicity. Heavy like the Shadow 750, and 40 hp. This one isn't running, but can't argue with the $600. If by next spring I got it going, I could easily triple my money, and ride it in the meanwhile.

People who own these seem to be very happy with them. Lighter than the RE350 by 60 lbs, but with 30 hp. With its carb. it won't be nearly as economical to ride as the RE, but they will deliver a decent 50mpg. If this was going for $900 here, I'd buy it. I could sell it next spring for $2500. It's in your color, too!
https://www.facebook.com/marketplace/item/7134873993212876/The last machine I bought, a few months ago, is a Suzuki GZ250 Marauder, another good choice for an around town bike. About the same power as the RE350, but only 300 lbs, it gives me 65-70mpg around town, and only set me back $1000. I'd happily trade it for an RE 350 at twice the price, but, like you, I'm not very motivated to go out and buy a new machine, at 4 times the cost of the used machine.
I saw an RE350 last night while riding my scooter. Maybe in 4 or 5 years, that one will be up for sale, at a price I'm willing to pay, but I'm certainly not going to spend all that time walking and dreaming.
