My friend who was a Royal Enfield dealer in the '70's mentioned a conversion that had a drum that you could remove the sprocket from to make replacement easier, and I would guess to let you change tooth ratios.  Is there such a conversion available for the modern Royal Enfields?

Check the Hitchcocks catalog. They had one for the iron barrel models.
You can only go higher in tooth count. Not smaller.

Hitchcocks do the rear drum conversion for EFI as well
this is the drum

then there are a few differently toothed sprocket rings to fit.
