Looking at some clubman bars, I see there are narrow and wide versions, Will both fit, or are the narrow ones...........too narrow to clear the casquette?

These appear different than the ones offered by the usual Enfield sources.

I think probably all of them will clear the casquette. Our bikes are narrower by far than any modern bikes.
The main issue with the Clubman bars is that they will hit the tank at full steering lock. So, if you have a tank-slapper, or the bike falls over, you will have a dented tank.
I fabricated a wider steering stop on my bike, after my first dented tank, because of course I thought, "Oh, that won't happen to me."
Oh yes it did!

Fabricating a wider steering stop is as simple as drilling and tapping 5mm hole in the steering stop tab and screwing a bolt that makes a nice adjustable stop.

I bought the Norman Hyde M bars from Steadfast Cycles. They work perfect on my Bullet. Check them out. Steadfast has a ebay site but I think their pricing is better off their home website. Around $60 for the bars.
I bought a pair of those BikeMaster bars. If you're into carpal tunnel you will love them. In fact you can have my BM bars for the cost of the shipping.
