I'm in the process of building a new engine for my much maligned Bullet with some more than stellar support, and we've got the engine case from what I know to be a military model (as the engine is painted olive drab,) with electric start (based on bolt pattern on the case.) I don't know any more about it, but I'd like to.

I have the engine number, and based on the engine's various features, I was able to determine it is at least a 2001 or 2002, but so far as finding a way to decode the engine number, my google fu has failed me.

Are there any good resources, or other ways to determine the year?

There’s a site in the UK that can date your Enfield, English or Indian. I can’t think of it off hand and I’m at work. Will post it when I get home.
That how I found out my “1970” model is a ‘95.

If you have the engine number, I wonder why you haven't already provided it here.

That said, perhaps this may help: https://www.royalenfields.com/2009/08/what-year-royal-enfield-how-to-tell.html?m=1

So badass my Enfield's actually illegal  in India. Yet it squeaks by here in Virginia.

Because I'm not very smart.

I do recall finding that link. As mine had electric start, that means it's at least 2002. The black plastic points cover also suggests it's earlier rather than later, but that could also be aftermarket.

That would fall in to 2002-2007, not a large span and I think they were pretty much identical through that period as far as getting parts.

If serial numbers are sequential, this serial number (512735) is lower than Fiona's - a 2003 - (512499,) meaning that this engine came out of an earlier year, the last character - "F" - indicates that it was made in June. Fiona's was A, indicating a January manufacture. Depending on production numbers, I think June 2002 is correct? Does that sound reasonable?

Royalenfields.com was the site I was thinking of and I see it's a US site not UK as I suggested.
If you don't yet have the info you need, contact Graham Scarth at   graham.scarth01@gmail.com  (I'm sure he won't mind me sharing that email address as it's listed on the front page of the site) and he can give you the info you need.

Crankcases # 2BS5-12735F are from an electric start 500cc Bullet manufactured in June 2002

By the way, recently I also tried to decode my engine's number and realized that this number starts with 1221. Since I used to be fond of numerology, I decided to check and find out what it could mean and came across an interesting article https://www.sunsigns.org/angel-number-1221-meaning/
It says here that the number 1221 means that I should stay focused on my life and my life goals.
