Going to be fitting a headlight without housing soon, does anyone have any pics and/or tips on how to hide most of the wiring from the headlight under the tank?

You will need a fairly large space to accommodate the number of wires and connectors housed onside the headlight shell.
 Don’t forget that these connectors are shielded from the weather inside the shell, you will need to provide this to wherever you relocate the to.

You might consider a "project box" or two. Available in almost any size and can use water tight grommets. Very affordable so buy a range of sizes.
(cut some rectangles of styrofoam to see what size you need)
