The pandemic has played havoc with the used vehicle market, simultaneously increasing demand for personal transportation, and destroying some manufacturer's ability to produce new vehicles for months at a time.

I know I predicted, elsewhere, here in the forum, that the 500's would go up in value after their discontinuation, and that the IBs would become the most valuable in the USA, due to scarcity, but that particular '92 Bullet that Parm suggested, from the FB marketplace in Sacramento, priced at $7500, seems to me to be about a decade ahead of the appreciation curve.  It wasn't very long ago that it was fairly common to find machines like this priced at half that amount, or less.  I bought a '99 Bullet, two years ago, in running condition but only fair cosmetics, for less than $1K.  $7500 is getting up into vintage Interceptor twin territory, machines that, in my opinion, have much more value appreciation potential.

Personally, I'd be looking to buy something cheaper, perhaps from further away, and pay the cost of having it transported.

The OP didn't specify whether they were specifically looking for an IB machine, or were interested in UCE bikes?  Considering UCE machines will open up the possibilities quite a bit.  I believe, however, that you will find that 350s, both IB and UCE, are quite rare in the USA.

True..7200 is waaay above what I am looking for.

I guess I will wait if something comes up local and I can save on shipping and see the bike in person.
