When my Electra EFI DL was new, eight weeks ago, I posted here about getting the seat lowered. I'm five - eight and short in the leg and could only just flat foot it with straight legs.
Just to update for those with similar concerns - I didn't have the seat lowered, but two thousand miles later, I find I have plenty of bend in the knee with both feet flat on the ground (same shoes). I'd say the seat (stock dual seat) has lost at least an inch in height, and feels just right.  I'm not heavy  -  165 pounds, and no I don't have a big arse either!
So if you're similarly concerned - give it time to break in before splashing out on re-modeling or replacing.

The same applies to the foam used in Iron Barrel seats. At least mine anyway.
