When I release the throttle when upshifting. Never did it before but it has been sitting for about a month. I'm thinking it's a fuel issue but I haven't ridden it more than a mile since I fired her up today so I don't know 100%. Maybe it will go away after that but I think I need a new tank of gas just to be safe.

Starts first kick as usual.
Idles wonderfully.
Smooth acceleration with no dead spots.
Plug check looked good-nice chocolate color
Valve adjustment is spot on.
No pinging although I didn't actually go through the whole timing process again as it started to rain.

What are your opinions?

Check you don't have a leak in any of the exhaust system joints, or a leak
between the carb and the head.

If it's popping when you shut the throttle my first guess would be a leak in
the exhaust system. It could be an ignition issue or just possibly the first
warning of an exhaust valve needing a grind. The head joint in the Bullet
does not transfer heat away from the valve that well but if it is a valve
you'd be more likely to get the popping at wide throttle openings.

If it sat for a month possibly the carb has a little shellack forming.

Mine sometimes gives one little pop when starting out cold in first gear.  Never repeats when warmed up.  I'm not going to over think it.
