I have a 2014 RE and it seeems to run a bit lean across the board, mainly noticeable just off idle.  Short of installing a Power Commander. is there any way to richen the mixture a bit, e.g. by tweaking the output of the O2 sensor or upping the pressure of the fuel pump?

I would wait until full break in (at least 1,000 mi?) before attempting any tweaks. My 2013 B5 is also a bit fluffy off idle. I gather from others on the forum that the TPS voltage is the critical element, search the site and brother Singh's video library.

Probably good advice.

How about plugs?  My bike came with Bosch Super R6.  I've had a bit of trouble crossing this to a NGK (or other) plug.  Some recommend their BPR6ES or the BPR7ES, citing a number 5 -- hotter -- as stock.  I'm not sure why a colder plug would help roughness or lean-like symptoms.  Maybe the -6 or -7 recommendation was for a different RE.

I may be talking out my arse but I seem to
remember that when this new motor 1st came
out the answer was to put in the Iridium plug...

It's a toss up here between the BPR6ES and the BPR6EIX (iridium). Some prefer the iridium. Some don't. I'm happy with my iridium.
