I am having this exact same problem with my crank case oil spewing everywhere on the rear of my iron barrel from the breather.  It has to be from all the mayonnaise forming from my winter oil change. I saw a lot of it in the filler cap.

One question: 
Will I starve the engine if I lose a lot of oil during a ride?  OR, is the engine casing just correcting itself to a proper oil level?

You probably aren't losing as much as you think. It doesn't take much oil to make a mess! If you drain your catch can, then ride it you will probably see what I mean.
Or, unless you have major problem, you will never blow all the oil out of the
engine.

As Bare says, clean out the catch can.
And while you are at it, clean out all the breather hoses that go to and from the catch can.

Then, take a long ride for at least 40 minutes to get the engine nice and warm, to get the condensed water out of the oil.
Short hops won't do it.
