Would it be possible to saw a few coils off and put in a spacer without binding?

Yes, probably.  I hadn't even thought of that, thanks for jogging my brain!  The only hitch is that the end of the spring needs to have the last coil bent in and sanded flat.  I could calculate how many coils to cut off for a given spring rate, then do the math and make sure there's still enough travel so that it won't run out of space to compress before it bottoms.

But then I don't get any boxes of bright shiny new parts in the mail :)

I like to keep my stock parts in one piece if I can but if the 29mm springs don't fit this could be the way to go.

Have you guys tried Race Tech yet? I am going to get a set of emulators and springs if they have the size.
Scotty are you sure on the 28mm size? If so, I'll send them an email.
They have a vintage section for springs and emulators but don't have Enfield on the list.

Yup, I measured when i had them out and so did the guy at the suspension shop.  The vintage/off road stuff from RaceTech that I've seen only came in lower spring rates than what we already have but I haven't called them directly.

I'm not thinking of emulators.  Too much for this simple bike but that's just my opinion ;)

And the whole disassembly/assembly procedure:
